What is uncapping?

Uncapping is the removal of the wax cappings from ripe honey combs before they go into the extractor. A small apiary needs no more than an uncapping fork or knife and a tray to work over. For bigger volumes, an uncapping machine takes over — the frame passes through blades or needles and is opened in seconds.
